There is a myth that soufflés are difficult to get right, especially at altitude, but with the right technique it is perfectly possible, and simple, to achieve towering creations that are as light as a feather. We'll cover savoury, sweet and twice-baked so you'll have a wide range of new skills to go away with. 

Travelling cake

Thank you so much for the INCREDIBLE cake that you made us for our wedding. We couldn't have been happier with it. It was the perfect design for the Deia landscape and unbelievably delicious. Spelt no less! I happily munched away on significant portions on the wedding night, which is something I've rarely done before! It is no easy feat carrying a cake across oceans & the fact that it looked so blooming perfect is really quite something. You are incredibly talented Cat. Thank you!!
